This phrase is found in Western Versions of the Nicene Creed but not in Eastern Versions but have yet to hear any complaints anywhere from it. Does anyone know why this was added?

We say "very God of very God." Wouldn't "God from God" be a derivation?

According to the side by side on wiki, "God of God" was in the original Nicene creed from the first Ecumenical Council, and "very God of very God" was in the modified version from the Second Ecumenical Council...

If you notice that there is God of God right before Light of Light. Could this be a translation issue?

I believe the difference is that the Western liturgical text is a composite of the creeds of the 1st and 2nd councils plus the Filioque, whereas the Orthodox use the text of the 2nd council; both liturgically use the 1st person singular rather than the plural as it stands in the conciliar texts in both Greek and Latin.
